What’s the status of the demographics rest-api? I notice there’s an OpenAPI description in the SPEC. But it’s not listed on the ITS-REST page of overview spec. https://specifications.openehr.org/releases/ITS-REST/Release-1.0.3

The link that you mentioned is of the latest stable version (Release 1.0.3).
The Demographic API is in development still, we had a round of discussions/review in the REST API Working Group. If nothing major happens then it will be part of the upcoming release (Release 1.1.0), initially with Development or Trial status.

Note about URLs of specifications, their form is 
`https://specifications.openehr.org/releases/{component}/{release|alias}/{specification_page}.html`.
In this case, the component is ITS-REST. The alias can be `latest` (which is an alias to the latest release), or `development` (which is an alias of current unreleased work, i.e. development).
The available specifications and releases can be seen also at `https://specifications.openehr.org/releases/ITS-REST`:
